Can data be double encrypted in Ontap and in StorageGRID ?

Answer

No, Fabricpool data is already encrypted via SSE 
 
If you enable encryption on the grid, it will only encrypt other, non Fabricpool ingest 
 
You may receive the below message but this can be ignored:
 
The selected object encryption is enabled for data from all StorageGRID clients. Data tiered from FabricPool to StorageGRID is already encrypted, so this setting will perform double encryption for these objects. Client-side encryption keys are owned by ONTAP
