No. There is no option that can hide or remove everyone from the output of showmount -e

Each path will show (everyone) having access in the command output
ONTAP cannot list acceptable clientmatches in showmount output

Showmount:
Historically, showmount on NFS clients has been how users can see exported file systems on an NFS server.
By default, NFS servers in ONTAP enable the showmount functionality to show exported paths, but do not list the allowed client access.
Instead, showmount displays that (everyone) has access.
