When using 7-Mode Transition Tool (7MTT) is it possible to have the transitioned data automatically encrypted?

Yes.
 
These are the requirements:
  • On the cluster Node, ONTAP must be 9.6 P7  or later
  • If ONTAP is less than 9.7 the cluster aggregate being transitioned to must  have NetApp Aggregate Encryption enabled ( NAE.)
  • In ONTAP 9.7  this is enabled by default.
  • All encryption requirements must be met including installing a volume encryption(VE) license and setting up an onboard or external key manager.
