Why does a UNIX user sometimes map to default Windows user?

Answer

Connection timeout with the DC will cause the filer to map a UNIX user to the default Windows user of the NFS server as a fallback procedure

Additional Information

It is expected behavior. Always if that happens you need to check the DC connection for temporary failures.
